Alaina’s Red Congee

1 c Sweet Brown Rice

½ c Red Lentils

½ c Red Adzuki beans

½ c Gou Qi Zi berries

¼ c Red Quinoa

Wash all ingredients in a strainer.

Cook for 2-3 hours in 6 or more cups of pure water.

Crock pots work beautifully just turn it on low and leave it overnight.

Season as desired.  Add more water if too thick. Congees can be sweet or savory.


Seasoning examples:  Tumeric, Cumin, Coriander or Curry Powder, (add to the mixture while cooking)

Moroccan spices, or add Braggs Liquid Aminos or soy sauce, Black or Brown Sesame Oil to taste when serving, green onions, grated ginger root, toasted brown or black sesame seeds.

You may also add vegetables such as diced carrot, leek, squash, yam or tofu, fish, chicken or egg, berries, walnuts, almonds, sunflower or pumpkin seed.

Therapeutic properties include improved digestion and elimination.  Red foods are rich in anthrocynanins, a potent anti-oxidant. In Chinese medicine they nourish the blood, hair, skin and nails, strengthen the Heart and Spleen organs.  Gou Qi berries are one most nutritionally dense foods that benefit the eyes and calm the mind.

Congees can be as simple as rice, ginger and green onion to recover from flue, colds or illness or contain as many as fifteen or twenty ingredients.
